High-Protein, Low Sugar Salmon & Roast Veg Pasta.

This is the kind of dinner I love, high in protein, packed with fibre, full of healthy fats and without the big hit of sugar and starchy carbs before bed.

Wild-caught salmon brings the protein, roughly 30g, and omega-3 fats, while edamame pasta gives you a higher-protein, higher-fibre, lower-carb alternative to traditional pasta that’s naturally gluten-free.

Then I load it up with roasted mushrooms and tomatoes, peppery rocket and crunchy radish. I also throw in coriander and watercress when I have them. They’re completely optional, but they’re an easy way to add even more variety, antioxidants and plant nutrients to your plate.

Watercress is particularly nutrient-dense and provides vitamin K, vitamin C and polyphenols, while coriander helps to take out heavy metals from your body and adds flavour. 

 

INGREDIENTS

  • Wild-caught salmon fillet
  • Extra virgin olive oil
  • Sea salt
  • Edamame pasta
  • Mushrooms, chopped
  • Cherry tomatoes
  • Rocket
  • Radish, finely sliced
  • Fresh coriander, optional
  • Watercress, optional

For the vinaigrette

  • 4 tbs Extra virgin olive oil
  • 2 Apple cider vinegar
  • 1 clove garlic, crushed
  • Sea salt 

Store the remainder in a jar the fridge for next time. 

 

METHOD

  1. Toss the mushrooms and tomatoes in a olive oil and sea salt, then roast until soft and golden.
  2. Cook the edamame pasta according to the packet directions, drain and set aside.
  3. Season the salmon with sea salt and cook in olive oil until golden on the outside and cooked through.
  4. Add the rocket, radish, coriander and watercress to a large bowl.
  5. Whisk together the olive oil, apple cider vinegar, crushed garlic and sea salt.
  6. Pour over the salad 
  7. Place salmon, pasta, roast veggies and rocket salad on a plate and enjoy! 

 

WHY I LOVE THIS FOR DINNER

Protein, healthy fats and plenty of vegetables make this a beautifully balanced evening meal.

Swapping traditional pasta for edamame pasta also gives you more protein and fibre with fewer carbohydrates (sugar) and it's gluten free. 

A low sugar evening meal can help keep your energy and blood glucose steadier overnight, rather than sending you into bed after a big sugar-heavy meal. Good sleep is influenced by many things, but keeping dinner low in sugar can be one piece of the puzzle.

And when you sleep well.. You give yourself a much better chance of waking up feeling refreshed, clear-headed and ready for the day, rather than immediately hunting for coffee and sugar.

Simple food. Big nutrition. And absolutely no boring diet dinner required.
