Sugar-Free Chocolate Biscuits (guilt-free + blood sugar friendly)

These are one of my go-to recipes when you want something comforting, chocolatey and satisfying, without the blood sugar crash and the belly weight. 

Ingredients:

  • 1/2 cup almond meal
  • 1/2 tsp baking powder
  •  3 tbs cacao powder 
  • 2–3 tbsp stevia, erythritol, or monk fruit
  • 1 egg 
  • 4 tbsp softened butter
  • 1/4 cup nut butter 

Method:

  1. Preheat oven to 175°C and line a baking tray with greaseproof paper.
  2. In a bowl, mix almond meal, baking powder, cacao and sweetener.
  3. Add egg, softened butter and nut butter. Mix with a fork until a smooth dough forms.
  4. Shape into 9 biscuits and place on the tray. Gently press each one down.
  5. Bake for 12 minutes.
